The BEST Chicken Recipe

Are you bored with the same recipes that you make week after week? Here is a simple and delicious favorite meal of mine that I would like to share. Guaranteed a hit for your whole family to enjoy.
This recipe is easy to make because most of the work is in the oven. The recipe is called “Chicken Bundle”.  It has different cheeses that you roll up with spinach in the chicken. You also need to pound out the chicken to an inch thickness, which can help take out that aggression from your stressful week. Ha! 

Chicken Bundle
Here are the items that you will need:

4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
1 pkg. (10 oz.) frozen chopped spinach, thawed, well drained
1 cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese
6 Tbsp. KRAFT Grated Parmesan Cheese, divided
6 small boneless skinless chicken breasts (1-1/2 lb.), pounded to 1/4-inch thickness
1 egg
10 RITZ Crackers, crushed (about 1/2 cup)
                                                                                       Package of rotini pasta, al dente
                                                                                       1 jar of your favorite pasta or alfredo sauce                   
Here are the directions on how to put it together:
  • Heat oven to 375ºF.
  • Pound out chicken breasts to 1 inch thickness. Mix cream cheese, spinach, mozzarella and 3 Tbsp. Parmesan until blended; spread onto chicken. Starting at one short end of each breast, roll up chicken tightly. Secure with wooden toothpicks, if desired.
  • Beat egg in shallow dish. Mix remaining Parmesan and cracker crumbs in separate shallow dish. Dip chicken in egg, then roll in crumb mixture to evenly coat. Place, seam-sides down, in 13x9-inch baking dish sprayed with cooking spray.
  • Boil 3 quarts of water, place ½ box of rotini in boiling water, cook uncovered approximately 8-10 minutes until al dente.  Drain well.
  • Place pasta sauce in medium saucepan until hot.
  • Bake 30 min. or until chicken is done (165ºF). Remove and discard toothpicks.
  • Place cooked pasta on bottom of plate, place chicken on top and pour sauce over to taste.
